Pizzeria Mozza, located in the bustling area of Oxford Circus, is a gem brought to life by the talented Nancy Silverton of California, whose roots are deeply entrenched in the world of sourdough and baking. This profound baking expertise translates into incredibly crispy, thin-crust pizzas that stand out in the crowded pizzeria scene of London. The precision and scientific approach that underpin their baking methods are palpable in every bite. The pizzas here are not just food; they are a testament to a meticulously researched and rehearsed process, showcasing a perfect blend of artistry and science.
I had the pleasure of speaking with one of the chefs at the end of 2023, who shed light on their rigorous review and research process. The chef detailed the extensive experimentation that goes into crafting new flavours and combinations, a practice that ensures only the finest creations make it to the menu. This dedication is evident in their thorough testing of even the smallest details, such as the layering of bacon on their pizzas to maintain crispiness without rendering fat into the base. This level of commitment to quality and innovation makes Pizzeria Mozza a truly special place and has secured its spot as my favourite destination for crispy pizza.
